Boulon Brasserie
Boulon Brasserie occupies a 7,097-square-foot anchor position at 1001 Water Street, on the ground floor of Thousand & One, the trophy office tower at the center of Water Street Tampa, Strategic Property Partners’ mixed-use district in downtown Tampa. Opened in January 2023 by Next Level Brands (Jeff Gigante, Andrew Wright, and Joseph Guggino), the project transformed a ground-floor commercial shell into an all-day French American brasserie, from morning pastry through late-night dinner.
Montreal-based Atelier Zébulon Perron designed the interior as a contemporary homage to the grand brasseries of Paris. Classic elements anchor the plan: a central column and a dramatic symmetrical bar spanning the length of the room beneath a towering backlit spirits display. Mosaic-tiled floors, fluted glass, and beveled mirrors complete the vocabulary. Bespoke fixtures by Lambert & Fils add rhythm, with linear pendants over the dining areas, a wall composition wrapping the main column, task lamps along the counter, and sconces integrated into the columns. The name itself shaped the design: “boulon” is French for bolt, a nod to the neighboring Tampa Bay Lightning, and hexagonal nut-and-bolt geometry recurs throughout the space.
The program seats 275 in the main dining room, with a private dining room for 40 and a private outdoor patio for 40 more, plus a patisserie in a separate street-front storefront. The result balances the grandeur of the brasserie typology with the demands of an all-day operation, rooted in European tradition while reading as distinctly contemporary within Tampa’s emerging Water Street district.
